Don't throw away all those greens attached to your beets!! Mix them with kale for a healthy saute.
What you'll need:
1 bunch kale
1 bunch beet greens
2 tablespoons olive oil
3 garlic cloves, minced
1 tsp freshly grated or powdered ginger
Salt and pepper to taste
Rinse kale and beet greens.
Remove stems from beet greens and chop into ¼ inch pieces.
Chop kale and beet greens into ½ inch strips.
Heat olive oil in large pan over medium heat. Add garlic and beet stems and sauté until softened, about 5 minutes.
Add kale, beet greens, ginger and stir. Add water if needed and sauté for 5-7 minutes until softened.
