Carrot Energy Bites Recipe

For an easy, no-bake, vitamin-packed snack, take these no-bake Carrot Energy Bites for a spin in the ol' food processor. The apricots and carrots provide a nice source of Vitamin A, and the oats and coconut give your newfound energy some serious lasting power. 

 

Ingredients:

  • 1 cup shredded carrots (from your Vegetable Seedsheet!)

  • ¼ cup almond flour (or ground almond meal)

  • 1 cup oats

  • ½ cup shredded coconut

  • 8 dried apricots

  • 2 tablespoons applesauce

  • 2 tablespoons honey

  • 1 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1 teaspoon vanilla

 

Steps:

  1. Throw apricots, vanilla extract, honey, and applesauce in a food processor. Blend until the apricots are in small pieces and the mixture is relatively uniform.

  2. Add the almond flour, carrots, oats, cinnamon, and nutmeg in the food processor. Blend until the mixture is well combined and sticks together easily.

  3. Scoop with a tablespoon measure. Then, roll the balls to coat in the shredded coconut.

  4. Place in fridge for short term storage or in the freezer for longer term storage. Grab an energy bite whenever you need a healthy pick-me-up!
