BLT Bites: A Memorial Day Recipe
Nothing says "America" more than a bacon-lettuce-tomato sandwich, and here we've done just that but with a twist. This is a lightened-up version of your classic BLT just in time for Memorial Day. Lose the slices of bread, round up some fresh veggies and don't forget the bacon (obviously). Tomatoes deliver a surge of antioxidants, and avocado will leave you feeling energized -- with some cholesterol-lowering benefits on the side.
1 head of butterhead lettuce (fresh from your Seedsheet)
1 ripe avocado
3 small tomatoes, sliced (picked off the vine)
3 pieces of cooked bacon
-Separate 3 lettuce leaves from the head and arrange on a platter
-Add sliced tomatoes, avocado and bacon on each piece of lettuce.
-Gather up your lettuce-cup and snack attack.
-Use tempeh bacon for a vegetarian option
-Top with a drizzle of Sriracha-mayo
-Scale-up the recipe to serve the whole crowd for BBQ finger-food
